Light Cheesy Garlic Bread


Ingredients

2/3 cup parmesan cheese, shredded
3/4 cup sharp cheddar cheese, cut into 1/2 inch cubes
2 1/2 cups all purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/4 teaspoon dry mustard
1/8 teaspoon cayenne pepper
1 1/4 cup low-fat buttermilk
1 tablespoon canola oil
1 egg
2 cloves garlic, minced

Directions

  1. Pre-heat your oven to 350 degrees, then butter a pan (I used a shallow glass one but you can use a bread pan) and sprinkle 3 tablespoons of parmesan over the bottom of the pan.
  2. Whisk together the dry ingredients in a large bowl, then add the cheddar cheese and 3 tablespoons of the parmesan.
  3. In another bowl whisk together the buttermilk, oil, egg and garlic. Then fold the mixture into the dry ingredients just until combined, be careful not to over blend.
  4. Pour the batter into the pan and sprinkle the remaining parmesan on top.
  5. Bake for 45 minutes or until golden brown and enjoy!

Apartment Gardening

Can't believe how fast my jalapeño plant is growing, I found a few baby jalapeños sprouting the other day 

 I love having succulents around the apartment, they're beautiful and so easy to care for.
If you can't have fresh flowers for your kitchen table an arrangement of succulents in eclectic potting is a beautiful substitute 
The beautiful orchid Bono got me for Valentine's Day is somehow on its second bloom
Aloe plant and lavender I started growing from seeds on my bedroom windowsill

Carne Asada Tacos


Ingredients

1 lb steak, I used skirt steak
juice of 1 lime
1/4 cup olive oil
1/4 cup minced cilantro
1 chili, minced
3 cloves garlic, minced
1 teaspoon sugar
1/2 teaspoon coriander
1/4 teaspoon cumin
1 tablespoon pureed kiwi
salt and pepper to taste
flour tortillas

Top with

minced cilantro
finely diced onion
hot sauce
limes

Directions

  1. Slice the steak into thin pieces then combine all the ingredients in a bowl and set in the fridge to marinade for 1-2 hours.
  2. Cook the steak in a skillet over medium high heat for about 10 minutes or until cooked thoroughly.
  3. Heat a little olive oil in another skillet and cook the tortillas for 30 seconds on each side just to soften.
  4. Top with hot sauce, lime, onion and cilantro. Enjoy!

Etsy Find: Datter Industries



Earlier today, during a moment of deep blog searching, I came across Kaye Blegvad's blog which led me to her Etsy site. I immediately fell in love with her delicate and dreamy jewelry. It featured all of my favorite things; eyes, arrows, feathers, and the most perfectly carved tiny hands. Her signet ring with crossed arrows is a personal favorite and also reminds me of Finely Made's logo (hint hint) I'm swooning!




Oh and huge shocker she's an incredible illustrator to boot!
